Menus 

Folks always love to ask, "what's your specialty?"  To be honest, the specialty of the house is to delight your palate.  I enjoy trying it all!  All of your menus are planned with your needs in mind.  Your feedback is very important through the entire process, and it is my pleasure to cook meals that you enjoy!

Here are just a few that I've prepared for clients, but remember, these are just samples.  Each of my clients' menus are prepared just for them, not for everyone else.  Be sure to scroll down all the way to check out a few of each.  Visit this page often, for I add new recipes all the time!

Poultry

Honey Nut Chicken - juicy chicken breasts coated in a crushed honey roasted peanut crumb

Sesame Chicken in Red Wine Sauce - the light crunch of sesame seeds and the tang of asian style sauce

Raspberry Balsamic Chicken - sauteed breasts in a reduction of balsamic vinegar, raspberry jam, shallots

Spicy Peach Chicken - flavors of the southwest are tamed by peach preserves in a picante gone sweet

Herb-crusted Roasted Turkey breast - the power of fresh herbs such as sage, rosemary, and thyme complement the turkey, roasted on the bone for juiciness and flavor

Fajita turkey burgers - burgers are stuffed with onions, peppers, and fajita seasoning, and served on whole wheat buns

Roasted Chicken Breasts with Sun Blush Pesto - served with pesto made from sun-dried tomatoes

Nacho stuffed shells with ground turkey - large pasta shells stuffed with refried beans, taco seasoned turkey, cheese, olives

 

Beef

Blue-Ribbon Meatloaf - guiltless lowfat beef and ground turkey, glazed with amber beer sauce

Sirloin Beef Burgundy - stew of bacon, mushrooms, fresh herbs, and burgundy wine made with tender sirloin, and served over herbed buttered egg noodles

Savory Salisbury Steak - a blend of lowfat beef and turkey, these steaks are slowly simmered in a rich steakhouse style tomato sauce

Pot Roast with Carrots and Potatoes - slow roasted until it falls apart, then served with a dark broth that has a hint of bay leaves, tomato, and soy sauce

Pizza Pot Pie - lean ground beef, pizza veggies (onions, mushrooms, peppers, garlic) in a fresh homemade sauce of tomatoes and basil, served pie style with the crust on top!

Rosemary Beef Stew - Italian style stew with basil, oregano, thyme, fresh rosemary, simmered in a red wine and fennel bulb broth

 

Pork

Fried Rice with Ham and Peas - brown rice, tender peas, and ham blend well in this asian style dish

Honey Mustard and Herb Breaded Tenderloin - a crispy outer crust gives way to a moist interior

French Pork Stew - delicate herbs, clear broth, and a creamy finish round out the meaty roast 

Herbed Loin Chops - tender chops are rubbed with rosemary, lavender, and thyme and sauteed, finished with a white wine pan sauce

Apricot Pecan Stuffed Loin, served with Bourbon Molasses Cream Sauce - loin is butterflied open and filled with chopped apricots, pecans, molasses, and herbs; roasted with a bourbon molasses glaze and finished with a splash of cream in the pan juices

Sauteed Pork and Pear with a Vodka Lemon Pan Sauce - fresh flavors of lemon, chives, and a splash of vodka served over sauteed pork tenderloin slices and pears

 

Fish and Shellfish

White Fish en Papillote - mild fish wrapped in parchment with olives, lemon, tomatoes, herbs

Salmon cakes - crisp on the outside with a cajun flavor, and moist on the inside with a hint of dill

Penne with Shrimp and Feta - large shrimp bubbled in a red sauce made with white wine, herbs, and tossed with feta and penne pasta; fresh and delicious!

Salmon Almondine - sauteed salmon filet served with toasted slivered almonds and lemon juice

Greek Shrimp with Feta - sweet shrimp sauteed with onions, peppers, fresh herbs, tomatoes, and then tossed with feta cheese and a little milk

Halibut baked with Tomatoes, Capers, and Herbs with a Feta Crumb Crust - flavors of onion, garlic, fennel bulb, anchovies, tomatoes, and fresh basil, then topped with feta, chopped pine nuts, fresh thyme, dry bread crumbs - wow!

Spice Rubbed Tilapia with Mango and Red Onion Salsa - citrus flavors build this salsa, over tilapia rubbed with a blend of cumin, coriander, paprika, chili powder

 

Side Dishes or Meatless

Mediterranean Green Beans - dressed in homemade Italian style red sauce with fresh herbs

Sauteed Broccoli with Toasted Pine Nuts - done crisp tender, with a little crunch of the nuts

Roasted Herbed Cauliflower - layers of fresh herbs, parmesan cheese, dash of lemon are roasted in

Roasted Sweet Potatoes with Lime Syrup - chopped small and toasted in the oven, served with warm lime syrup for a sweet but tart twist on the familiar sweet potato

Whole Wheat Muffins - nutty and a bit sweet, with hints of caraway seed giving aromas of licorice

Green Beans with Orange Rosemary Gremolata - lightly steamed, tossed with fresh orange zest, rosemary, and olive oil

Braised Baby Lima Beans - dressed in a light tomato herb sauce, baby limas are much more delicate

Confetti Barley with Carrots and Peas - enjoying new whole grains is festive with this confetti blend of barley, fresh herbs, and vegetables

Broccolini with Balsamic Vinegar, Pine Nuts, and Raisins - crisp tender broccolini or other greens take on a sweet rich tang with this pan sauce

Apple Glazed Carrots with Bacon - baby cut carrots simmered in apple juice, onions, and bacon

Asparagus with Lemon Gremolata - crisp steamed asparagus, tossed with a blend of olive oil, lemon, fresh parsley, and garlic

Broccoli with creamy lemon vinaigrette - just the right balance of shallot, lemon, a dash of salt, in a creme fraiche or sour cream base

Black Bean and Corn Salad - blend of black beans, sweet corn, onions, peppers, and tossed with a red wine vinegar and lime juice dressing

Sweet potato souffle - sweet and creamy, lighter than a heavy casserole

Patti LaBelle's Over the Rainbow Macaroni and Cheese - using a variety of cheeses, this is definitely an "adult" version of this kid classic
